Brewing method:
1、Boil water: Start by boiling fresh, filtered water. Pu'er tea is usually brewed with water at a rolling boil, around 212°F (100°C).
2、Preheat the gaiwan: Pour some hot water into the gaiwan to preheat it. Swirl the water around and then pour it out.
3、Measure the tea leaves: Use approximately 1/2 tablespoon(8-9 grams) of dark Pu'er tea leaves for every 6 ounces (120-180 ml) of water. Adjust the amount based on your taste preferences and the intensity of flavor you desire.
4、Add the tea leaves: Place the measured dark Pu'er tea leaves into the preheated gaiwan.
5、Rinse the leaves: Pour a small amount of hot water over the tea leaves, quickly swirling it around. This step helps awaken the leaves and remove any impurities. Pour out the rinse water.
6、First infusion: Slowly pour hot water into the gaiwan, covering the tea leaves. Immediately cover the gaiwan with the lid and let it steep for about 20 to 30 seconds.
7、Pour and strain: Hold the lid slightly tilted to act as a strainer while pouring the brewed tea into a pitcher or directly into the cups, ensuring that all the liquid is strained.
8、Second and subsequent infusions: Repeat the process of pouring hot water into the gaiwan, gradually increasing the steeping time with each subsequent infusion (e.g., 30 seconds, 45 seconds, and so on). Dark Pu'er tea is known for its ability to withstand multiple infusions, and each infusion brings out different flavors and characteristics.
